Basic Volcano Rice

Volcano rice is a colorful blend of traditional aromatic West Java rices grown on volcanic soils. The mix includes brown rice, whole grain red rice and lightly milled red rice. It is dense with nutrients and fiber and big on flavor.

Makes about 2 1/2 cups

  • 1 cup volcano rice
  • 2 cups water or broth
  • Salt to taste (if desired)
  1. Rinse rice until water runs clear.
  2. Put rice and water into a small pot and bring to a boil over medium-high heat. Season with salt, if desired. Reduce heat to medium-low, cover pot and simmer until liquid is completely absorbed and rice is just tender, about 45 minutes. Resist taking off the lid to check progress; valuable steam escapes! Set covered pot aside off of the heat for 10 minutes then uncover and fluff rice with a fork.
