Mint and Ginger Lemon "Aid" Popsicles

Mary mary qc strikes a refreshing cord with her pleasantly spiked minty lemon popsicles. Because the amount of vodka is so slight, feel free to eliminate it for family parties. Note: Allowing the first mixture of water, lemon juice, sugar, and mint to spend an hour time in the refrigerator before mixing in the remaining ingredients will result in a more pronounced mint flavor. Add another teaspoon of grated fresh ginger for extra punch.

The hot and sultry days of summer are coming! These adult treats "aid" in cooling one off and bringing some much needed relief! Serve them at your next Happy Hour. They will be the hit of the party! Note: the recipe may seem "light" on the vodka but any more and the popsicles won't freeze. (Remember, be responsible, don't lick and drive.)

Makes 8-10 popsicles

  • 2 cups water
  • 1 cup freshly squeezed lemon juice
  • 3/4 cups sugar
  • 1 teaspoon chopped mint
  • 2 ounces vodka
  • 1/2 teaspoon freshly grated ginger
  • 3 tablespoons mint cut chiffonade (for garnish)
  1. In a blender mix water, lemon juice, sugar and teaspoon of chopped mint.
  2. Poor through a sieve into a pitcher.
  3. Add vodka and grated ginger to pitcher and stir.
  4. Pour into popsicle mold. Top with chopped mint as garnish. Insert popsicle sticks.
  5. Freeze for a minimum of 8 hours.
