Serves 3-4
Quinoa:
- 1 cup Rinsed Quinoa
- 2 cups Water
- 1 tablespoon Butter or Margarine
- 1 teaspoon Cinnamon
- 1/2 teaspoon Salt
Add quinoa, water, butter and seasonings to a medium saucepan, bring to a boil. Reduce heat, cover and let simmer for about 15 minutes until water is absorbed.
Cinnamon Apples:
- 1 tablespoon Butter or Margarine
- 2-3 Apples- peeled, cored and cut into small chunks
- 1 1/4 cup Unsweetened Almond Milk
- 3 tablespoons Maple Syrup or Agave Nectar
- 1/4 cup Apple Cider or Apple Juice
- 1/3 cup Sliced Almonds
- 1 teaspoon Vanilla Extract
- 1 tablespoon Cinnamon

Peel, core and cut the apples.

Melt butter over medium heat in a large skillet.

Add the apples and sprinkle cinnamon, maple syrup and vanilla and let the apples cook until they start to become hot and soften, about 3 minutes.

Add apple cider, almond milk and bring to a boil.

Reduce heat, add almonds. Cover and let simmer for about 20-25 minutes. Stir often and add more milk or juice if needed.

Add quinoa to stewed apples, blend well and enjoy!
