Quinoa Porridge with Stewed Cinnamon Apples

Serves 3-4

Quinoa:

  • 1 cup Rinsed Quinoa
  • 2 cups Water
  • 1 tablespoon Butter or Margarine
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt

Add quinoa, water, butter and seasonings to a medium saucepan, bring to a boil. Reduce heat, cover and let simmer for about 15 minutes until water is absorbed.

Cinnamon Apples:

  • 1 tablespoon Butter or Margarine
  • 2-3 Apples- peeled, cored and cut into small chunks
  • 1 1/4 cup Unsweetened Almond Milk
  • 3 tablespoons Maple Syrup or Agave Nectar
  • 1/4 cup Apple Cider or Apple Juice
  • 1/3 cup Sliced Almonds
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Cinnamon
  1. Peel, core and cut the apples.
  2. Melt butter over medium heat in a large skillet.
  3. Add the apples and sprinkle cinnamon, maple syrup and vanilla and let the apples cook until they start to become hot and soften, about 3 minutes.
  4. Add apple cider, almond milk and bring to a boil.
  5. Reduce heat, add almonds. Cover and let simmer for about 20-25 minutes. Stir often and add more milk or juice if needed.
  6. Add quinoa to stewed apples, blend well and enjoy!

    JessicaPruitt says: Start by preparing the apples first because they take a little longer to cook. I samples this in store recently and everyone loved it, even kids!
