Gluten Free No-Bake Rice Crispy Granola Bars

These delicious "rice crispie" granola bars can be used as snack, breakfast or dessert! Great in lunch boxes, on the road, or as a party treat! Can be made gluten free if desired. Substitute cranberries for raisins or add sliced almonds or walnuts for extra nutrition and crunch!

Serves 12

  • 2 1/2 cups Erowhen GF Rice Crisp Cereal
  • 2 cups GF Old Fashioned Rolled Oats
  • 1/2 cup Raisins
  • 1/2 cup Firmly packed brown sugar
  • 1/2 cup Honey
  • 1/2 cup peanut butter or sunflower seed butter
  • 1 teaspoon Vanilla
  1. In a large bowl, combine cereal, oats and raisins and set aside.
  2. In a small saucepan combine brown sugar and honey. Bring to a boil, stirring constantly. Remove from heat. Stir in peanut butter and vanilla and blend until smooth.
  3. Pour heated mixture over cereal mixture and use a rubber spatula to mix until completely combined.
  4. Press mixture into ungreased 13 x9 inch pan. Cool, cut into bars and serve!
