  • 2 ounces cream cheese
  • 1 8.5 ounce can artichokes, chopped
  • 1 cup shredded cheese (mozzarella, monterey jack, etc.)
  • chips or veggies to dip
  1. Preheat the oven to 350 degrees
  2. Clean kale, remove stems, roughly chop
  3. combine onion, garlic, and 2 cups water in a large pot
  4. Bring to a boil and boil for 2 minutes
  5. Add kale to pot
  6. Cook, stirring frequently for about 3-5 minutes
  7. Remove kale from water and squeeze all water from kale. VERY IMPORTANT!
  8. Combine parmesan, cottage cheese, mayonnaise and cream cheese in food processor, process until smooth
  9. Add kale and pulse until combined
  10. Stir in artichoke hearts and 3/4 cup shredded cheese
