Celebrate the beginning of spring with this beautiful drink that combines tart and tangy rhubarb juice with anise-flavored pastis.

Serves 1

• 1 ounce pastis
• 2 ounces cold water
• 1 1/2 ounce rhubarb juice
• 1 teaspoon grenadine
• ice

1. Pour pastis into glass, and then pour cold water over it. Stir to combine (the pastis will change from a clear yellow to a milky white.)
2. Pour in the rhubarb juice and grenadine and stir to combine. Add ice to fill glass. (We garnished our cocktail with small viola flowers - they are edible!)
