Artichoke Puff Pastry Pizza

It was cricket season and my husband was at home watching his favorite game, and I am not a sports person at all, so out of that not so interested in cricket game this pizza was prepared.So, I wanted to occupy myself and make my partner a quick and nice game watching stuff. So, I looked into refrigerator and I had all these ingredients and then the final product , the pizza. It is very simple but really delicious. Later on , we went to have pizza in Olio pizza e piu place in NY and ordered a pizza with similar flavors. So, both ways it tasted best. Either on pizza dough or puff pastry sheet.

Makes 2

  • 1 canned artichokes with herbs and spices
  • 1 packet puff pastry sheet
  • 1/2 cup mayonnaise
  • 1/2 cup marinara sauce
  • 1/4 cup Gruyere cheese , shredded or grated
  • 1/4 cup Mozzarella , shredded or cut into slices
  • 2 to 3 tablespoons parmesan cheese
  • 3 tablespoons fresh rosemary
  • Salt to taste
  • Black pepper to taste
  • extra virgin loive oil to brush the pastry sheets
  1. Thaw the puff pastry sheet.
  2. By the time, chop the artichoke hearts into small pieces. Add, all the ingredients together in a bowl, leaving the both gruyere and mozzarella cheese. Season it well.
  3. Take the puff pastry sheet, brush it with some olive oil and then spread this mixture of artichokes. Sprinkle or spread the gruyere and mozzarella cheese equally all over it. And, bake it in a pre-heated oven at 350 F till golden brown for about 20 minutes or so.
  4. Once done, cut it into pieces. And, serve it hot with some good white wine.
