I've been trying to find ways to use chia seeds, so I made this one day and liked it.

Serves 4-6

• 1/2 cup Lime juice
• 1 teaspoon Cayenne pepper
• 1 teaspoon Red pepper flakes
• 1 teaspoon Cardomom
• 2 tablespoons Chia seeds
• 1 tablespoon Honey
• 1 packet Arugula, washed
• One Mango, cubed
• One Avocado, cubed
• 1/3 bunch Cilantro

1. Mix the first six ingredients together in a bowl with a whisk or in a blender. Allow to sit while fixing other ingredients.
2. Cube the mango and avocado.
3. Pull cilantro leaves from the stems. Then wash and spin the cilantro leaves and arugula in a salad spinner.
4. Gently toss mango, avocado, cilantro and arugula in a large salad bowl.
5. Add and gently toss dressing just before serving. If the dressing thickens too much, just add a little water or more lime juice.
