I use what pops up first in my community garden plot.
- 2 cups arugala
- 1 cup spring greens
- 1 handful chopped tomato
- 1 tablespoon virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 ounce shaved reggiano parmesan
tear greens by hand, combine with tomato, sprinkle with cheese, drizzle with olive oil and vinegar, serve.
