This recipe was entered in the contest for Your Best Arugula Recipe.


I use what pops up first in my community garden plot.

Serves 2

  • 2 cups arugala
  • 1 cup spring greens
  • 1 handful chopped tomato
  • 1 tablespoon virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 ounce shaved reggiano parmesan

tear greens by hand, combine with tomato, sprinkle with cheese, drizzle with olive oil and vinegar, serve.
