Red Lentil Burger w/ Roasted Red Pepper Sauce

I learned a lot about creating dishes using legumes from my vegetarian daughter. One of my recipes for red lentils was in Southern Living Magazine. I expanded on that recipe and started doing Lentil Burgers served w/ various sauces. This one is a favorite w family and friends.

Serves 4

  • 2 cups Water
  • 3/4 cups Red Lentils
  • 1/2 teaspoon Salt
  • 1/2 cup Mayo or Greek Yogurt
  • 1 minced Garlic clove
  • 1 Roasted Red Pepper fr Jar
  • 1 dash Hot Pepper Sauce
  • 1 dash fresh Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 small Onion
  • 3 Carrots
  • 2 Garlic cloves
  • 1 teaspoon ground Cumin
  • 1 cup fresh Italian Breadcrumbs
  • 1/4 cup Italian Parsley
  • 2 Eggs slightly beaten
  • 1 tablespoon Sea Salt
  • 1 tablespoon Pepper
  1. Cook Lentils for about 20 minutes covered. Cool.
  2. Mix mayo, garlic, roasted red pepper, hot sauce and lemon juice in mini food processor or by hand.
  3. Pulse onion, carrots, garlic in food processor (you can saute this first in olive oil or sometimes I add it directly to cooked red lentils and the next ingredients). Add cumin, breadcrumbs, parsley, eggs, salt and pepper and pulse until incorporated. Mix all and chill in refrigerator. Form patties and saute in olive oil and a little butter.
  4. Spread red pepper sauce on your favorite bun (top and bottom bun). Place cooked red lentil patty on top. Embellish w/ sliced tomato and butter lettuce. Serve w your favorite 365 Kettle Chips. Enjoy!!
