My family loves this recipe, and is a staple in our house. The kick from the red pepper is offset by the cool, crunchy slaw.
Serves 4
Burgers:
- 1 tablespoon Butter
- 1/2 Small sweet onion,minced
- 2 Cloves garlic, minced
- 2 tablespoons Tomato paste
- 1 teaspoon Brown sugar
- 1 tablespoon Worcester sauce
- 1/2 teaspoon Red pepper flakes
- 1 teaspoon Kosher salt
- 1/4 teaspoon Fresh cracked pepper
- 2 teaspoons Chopped fresh Thyme
- 1+1/4 lb Ground chicken ( mix of dark and white)
- 4 Soft slider size buns, or regular buns
- 1 tablespoon Evoo
Slaw:
- 2 tablespoons Honey
- 1 Lemon, juiced
- 3 tablespoons Sweet pickle relish
- 2 cups Shredded cabbage mix
- 1/2 Thinly sliced sweet onion
- 1 tablespoon Evoo
- Salt and pepper to taste

In a small frying pan, melt butter over medium heat. Add chopped onions,garlic and tomato paste.stir for 5 minutes to soften onions, add brown sugar and remove from heat. Transfer to mixing bowl, let cool for 3-4 minutes, add Worcester, red pepper, salt, pepper, thyme and ground chicken. Mix together until well incorporated. Mixture will be quite mushy. Form into patties. Meanwhile, heat 1 tablespoon EVOO over medium high heat in a non-stick pan.
Gently transfer patties to heated pan. Cook 5-6 minutes on each side.

While cooking, mix together the slaw. Combine honey, lemon juice, EVOO, relish,onions, salt and pepper. Toss to coat

Place cooked burger on bun, top with slaw. Enjoy
