AB & FF (Almond Butter and Fresh Fruit Sandwich)

This is a recipe that doesn't really need a recipe, but for posterity's sake, I'm writing it down! Besides, there are a couple of special touches here that really amp up the flavor. And with strawberries getting better as the warm weather progresses, well--this sandwich makes for a perfect snack, breakfast, lunch, dinner anytime meal!

Serves 1

  • 2 slices sprouted whole grain bread, toasted or not toasted (I love Ezekial Cinnamon Raisin for this sandwich!)
  • 2 tablespoons no salt, sugar, or oil added almond butter
  • 1 teaspoon honey
  • 1/2 ripe banana sliced
  • 4 strawberries sliced
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon unsweetened flaked coconut

On each slice of bread, spread 1 tablespoon of almond butter. On one slice, drizzle honey and arrange banana and strawberries slices. Sprinkle on cinnamon and flaked coconut. Take other slice of bread and put it on top of the fruited slice. Cut in half and serve!
