This photo is of my burgers over a radicchio saute with a cilantro sauce over top!
This is one of my favorite recipes and a real crown pleaser. You can make these with any veggie or veggies! Also can be baked or pan-fried. I like them pan-fried the best!
Instead of the cilantro you can use parsley, scallions, dill, or fresh thyme insead.
Makes 8 burgers
- 1/2 cup brown rice
- 1/2 cup millet
- 1 small yam or sweet potato
- 2 tablespoons soy sauce
- 1 tablespoon Toasted sesame oil
- 1/4 cup finely chopped cilantro
- 4 tablespoons extra virgin olive oil
To a pot with a tight fitting lid at the brown rice, millet, and 3 cups water.
Chop sweet potato (leaving the skin on) and add to the pot with the rice and millet.
Bring to a boil, then reduce heat to lowest setting, cover, and cook for 40 minutes.
Remove from heat and transfer to a large bowl. Stir in the soy sauce, toasted sesame oil, and cilantro.
You want to let this mixture cool for about an hour, or until the mixture is cool enough to handle and you can form it into patties. It will firm up as it cools. You can speed up the cooling process by putting the mixture in the fridge and or stirring it occasionally. Don't let it completely cool or it will be more difficult to form into patties.
Form into patties. Coat the bottom of a pan with the oil and heat over medium heat (the amount of oil you use will depend on the size of your pan). Pan fry burgers for about 3 minutes per side, or until they become golden brown.
