Shelby's Sweet Italian Lasagna

If I am known for any recipe, it is my lasagna. I don't know if the name of the recipe is describing me or the lasagna.

Serves 8-10

  • 2 jars pasta sauce
  • 1 box no boil lasagna noodles
  • 1 pound sweet Italian sausage, browned
  • 2 eggs, whisked
  • 1-15 ounce container ricotta cheese
  • 4 cups mozzarella, shredded
  • 1/2 cup parmesan cheese, shredded
  • 2 tablespoons dried Italian herbs, such as oregano, parsley, thyme
  • 1 teaspoon onion powder
  1. Preheat oven to 375.
  2. In a 13X9 pan, spread 1 cup of sauce on bottom of pan.
  3. In a bowl, add browned sausage to sauce, reserving 1/2 cup of sauce.
  4. In separate bowl, combine whisked eggs, ricotta cheese, 2 cups of the mozzarella cheese, parmesan, and 1 tablespoon of Italian herbs.
  5. Layer in the order, 4 uncooked lasagna noodles, then 1/3 part of the ricotta cheese mixture, 1/3 sausage mixture, and 1 cup mozzarella cheese.
  6. Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1/3 sausage mixture.
  7. Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture, and remaining sausage mixture.
  8. For top layer, 4 uncooked lasagna noodles, reserved 1/2 cup sauce, and remaining 1 cup mozzarella. Make sure all noodles are covered with sauce.
  9. Bake covered with foil for 50-60 minutes.
  10. Uncover and continue cooking until all the cheese is melted on the top
  11. Let stand 15 minutes before serving.
