We always have fresh vegetables and dip around for snacking during the day. Here is one of our favorites.

Serves 8

  • 1 cup lemon Greek yogurt
  • 1/4 cup mayonnaise
  • 1 cup feta, crumbled
  • 1/2 cup fresh mint, chopped
  • 2 scallions, chopped
  • 2 tablespoons lemon juice
  • zest of one lemon
  • fresh ground pepper, to taste
  1. Combine yogurt, mayonaisse and feta in a food processor. Process until smooth.
  2. Add remaining ingredients. Serve with vegetables or toasted pita.
