I have a small family and in the summer, we often cut up a watermelon to eat with dinner and have a ton leftover. I love this recipe because it's easy and I can make it immediately, or assemble it later. Also, the sweetener can be substituted easily based on your taste/diet.

Makes Approximately 8, depending upon your popsicle molds

  • 4 cups Watermelon, cubed
  • 1/3 cup Sugar, Agave syrup or honey
  • 1/3 cup Mint leaves
  • 1 Lime, peeled
  1. Cube watermelon, use fresh or frozen (seedless is easier)
  2. Add all ingredients to a blender or food processor and puree
  3. Pour into popsicle molds and freeze until firm. Done!
