Raw Mint Chocolate Truffles with Almonds and Sea Salt

Genevievemarie's chocolate-mint truffles have all the qualities raw truffles aspire to: texture dense enough to sink your teeth into, the right amount of sweetness (these little guys fit firmly in the dessert category), and the ideal balance of chocolate and mint. So often mint-flavored confections draw herbal intensity from processed mint flavoring or extract. Here, fresh mint is given a chance to shine and runs with it. Expect a fudgy "candy" with a little crunch from finely chopped nuts, and just the right amount of moisture. Note: If you don't have a mini cookie scoop, use two teaspoons to drop truffles onto a parchment-lined cookie sheet. Allow the truffles to firm up in the fridge for 5 minutes, then roll briefly between your palms to create smooth balls.

A healthy, raw dessert treat, these little gems are quick and simple to make. The perfect duo of mint and chocolate are complimented by the crunch of almond and hint of sea salt. Indulge in this fresh burst of summer flavor!

Makes 40

  • 1 1/2 cup almonds
  • 6 dates, pitted
  • 1 cup mint leaves, packed
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1/2 cup cocoa powder
  • 1/4 cup hemp hearts
  • 1/4 cup unsweetened shredded coconut
  • 3/4 teaspoons vanilla
  • 1/2 teaspoon sea salt
  1. Using a food processor, add all ingredients in order listed.
  2. Blend, pausing as needed using a spatula to scrape down sides of bowl. Blend until nuts are very finely chopped and mixture can hold shape when pressed together.
  3. Using a mini cookie scoop, form into 1 inch balls. Refrigerate for 15 minutes before serving. Store in fridge.
