I cut this recipe out of a newspaper at least 20 years ago and lost it so not sure about the proportions, you can certainly adjust to your taste. It does not use alot of mint but the mint greatly enhances and complements the other flavors.
I have categorized it as a dessert but it could be a salad too, it has no sugar at all except in the candied ginger.
The recipe is deceptively simple - the result is a sophisticated taste.
