Chocolate and Mint are two of my very favorite things together. I usually make this smoothie for a quick and easy sweet treat all Summer long while I have so much fresh peppermint in the garden. I also harvest a lot of mint throughout Summer and make the same recipe using dried mint in Autumn, Winter and Early spring, only using 1/4 C of dried mint in place of fresh. If you'd like your smoothie more chocolaty add another 1/2 to 1 TBSP cacao nibs. You can also double the recipe and use the extra to make Mint Chocolate Popsicles, just pour into your favorite Popsicle molds and freeze overnight.
In a high power blender add ingredients in the order listed and blend on high for 30-45 seconds until smooth. Pour in your favorite glass and enjoy!
