Minted Peaches and Raspberries In Rose'

This is a refreshing and delicious summer drink, mint is the star of the show adding a freshness to both the fruit and the wine. I used fresh fruit that I flash froze and macerated for a little over an hour, I wanted the fruit to be partially frozen making the wine even colder. So good on a hot day! The longer it sits the more delicious it gets!!

Serves 2

  • 2 ripe peaches fresh or frozen peeled and sliced
  • 1 cup raspberries fresh or frozen
  • handful of mint torn
  • 2-4 tablespoons sugar (start with 2 tbs and add more if needed)
  • 12 ounces rose' or pink champagne
  1. Place the mint and sugar in mortar and muddle so that the oil from the mint leaves infuses the sugar. Put the fruit in a container and add the mint infused sugar, toss to combine and refrigerate for an hour (longer if fruit is frozen) After 30 minutes toss the fruit to ensure every piece is well macerated.
  2. Spoon the fruit and minty syrup into wine glasses and pour the cold rose or champagne over the fruit. Sip the wine and eat the fruit, enjoy!
