Curried Adzuki Beans and Kale

The adzuki bean is a small, reddish-brown bean that has a sweet flavor and is popular in Japanese cooking. In this dish we are giving the bean a sweet and smoky flavor with the addition of curry powder.

Serves 6

  • 1 cup adzuki beans (soak covered in water 24 hours prior)
  • 2 teaspoons curry powder
  • 1 tablespoon 365 olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 head kale, trimmed
  • sea salt, to taste
  • fresh ground pepper, to taste
  1. Put beans in a pot and cover with water. Bring to a boil, reduce heat and simmer, covered, until beans are tender, about 30-45 minutes.
  2. Drain beans and transfer to serving dish. Add curry powder.
  3. Saute onion and garlic in olive oil in medium skillet.
  4. Add kale to skillet. Sprinkle with 2 tablespoons water. Cook, tossing often, until greens are bright green and wilted slightly, about 3 minutes. Remove from heat.
  5. Add the kale to the beans and season with salt and pepper.
