The adzuki bean is a small, reddish-brown bean that has a sweet flavor and is popular in Japanese cooking. In this dish we are giving the bean a sweet and smoky flavor with the addition of curry powder.
Serves 6
- 1 cup adzuki beans (soak covered in water 24 hours prior)
- 2 teaspoons curry powder
- 1 tablespoon 365 olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 head kale, trimmed
- sea salt, to taste
- fresh ground pepper, to taste

Put beans in a pot and cover with water. Bring to a boil, reduce heat and simmer, covered, until beans are tender, about 30-45 minutes.

Drain beans and transfer to serving dish. Add curry powder.

Saute onion and garlic in olive oil in medium skillet.

Add kale to skillet. Sprinkle with 2 tablespoons water. Cook, tossing often, until greens are bright green and wilted slightly, about 3 minutes. Remove from heat.

Add the kale to the beans and season with salt and pepper.
