I learned this recipe from a young Italian woman who I worked with one summer. It is very simple, but it is always a hit at parties and barbecues.
Serves 8
- 4 beefsteak tomatoes
- 1 handful basil
- 4 cloves of minced garlic
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 baguette

chop tomatoes into a 1/4 inch dice

shred the basil with your hands

combine the tomatoes, basil, and garlic in a bowl

drizzle the olive oil and balsamic vinegar over the top

sprinkle with salt and pepper

fold all of the ingredients together

cut the baguette into 4 even sized pieces and then slice them open lengthwise

place the pieces of bread on a cookie sheet and brush with olive oil

put the bread in a 350 degree oven until slightly crispy about 5 minutes

spoon the tomato basil mixture on top of the bread and serve
