Garden Fresh Tomatoes and Basil Pasta

Garden fresh. delicious, summer pasta. Picking fresh basil fills the air with a delicious spicy aroma. On a warm summer evening enjoy basil and tomatoes with balsamic vinegar and olive oil tossed with mozzarella and pasta.

Serves 6

  • 3 cups chopped, seeded ,garden ripened tomatoes
  • 1 medium thinly sliced garden onion
  • 1 cup fresh thin strips of basil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • dashes sea salt
  • dashes fresh ground pepper
  • 1 cup freah mozzarella cubes
  • 1 pound spaghetti

In a large pasta bowl, dump everything except mozzarella and spaghetti. Let sit for at least 2 hours. Cook pasta according to box directions. Drain. Dump pasta into the pasta bowl. Mix. Add mozzarella cubes. Toss.
