This is an delicious summer dessert utilizing seasonal sweet cherries.

Makes 18 muffins

  • 1 cup sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons egg replacer powder whisked with 6 tbs of water
  • 3/4 cups 365 almond milk
  • 1/4 teaspoon oil
  • 2 cups whole pitted cherries, drained well
  1. Sift dry ingredients together.
  2. Combine liquids together and add to dry ingredients.
  3. Fold cherries. Recipe also works for blueberries and other fruit.
  4. Bake in a greased muffin tin at 425 degrees for 25 minutes. Makes 18 medium muffins
